Bailie’s Backyard BBQ: Pub-Inspired Recipes You Can Make at Home

Smoky BBQ Chicken Wings with Guinness Glaze

These sticky, finger-licking wings are always a crowd-pleaser – and the Guinness gives them a rich, deep flavour that’s next-level.

What you’ll need:

  • 1kg chicken wings

  • Salt and pepper

  • Smoked paprika

  • Garlic powder

  • 1 bottle of Guinness

  • BBQ sauce (about 100ml)

  • Brown sugar

  • Soy sauce

How to make them:

  • Preheat your grill or oven to 200°C (fan).

  • Season the wings with salt, pepper, smoked paprika and garlic powder.

  • Bake or grill until crispy, turning halfway through.

  • While the wings cook, pour the Guinness into a saucepan and simmer to reduce slightly.

  • Stir in BBQ sauce, brown sugar and soy sauce, and let it bubble away until thickened.

  • Toss the cooked wings in the glaze and pop them back on the grill or in the oven for a few more minutes to caramelise.

  • Serve hot, sticky and with plenty of napkins.

Crispy Sweet Potato Fries with Garlic Mayo

A Bailie favourite, now easy to enjoy at home in the back garden.

What you’ll need:

  • 2 large sweet potatoes

  • Cornflour

  • Olive oil

  • Salt

For the garlic mayo:

  • Mayonnaise

  • Crushed garlic

  • A squeeze of lemon juice

How to make them:

  • Slice the sweet potatoes into thin fries. If you have time, soak them in cold water for 30 minutes – it helps them crisp up.

  • Pat dry, then toss with cornflour and a drizzle of olive oil.

  • Spread out on a tray (no overlapping) and roast at 220°C until golden and crisp.

  • While they cook, stir together mayo, garlic and lemon juice for a simple dip.

  • Serve hot with the garlic mayo on the side.
